Frejon

Frejon is a bean and coconut milk soup. It is eaten among Christians and Catholics in Brazil and Nigeria on Good Friday. It is commonly served with garri— a flour made from cassava root—sprinkled on top. Fish stew also is a traditional accompaniment for frejon. Recipes can vary with some adding fish sauce on top before serving.

Ingredients

  • 2 cups cooked brown or black beans
  • 1 cup coconut milk
  • 3 tsp granulated sugar, or to taste
  • ½ tsp salt, or to taste
  • ½ tsp cinnamon powder, or to taste
  • 6 whole cloves, or to taste

Directions

  1. Drain beans of any liquid and then add to blender with coconut milk.
  2. Puree mixture until smooth.
  3. Heat bean mixture in medium pan over medium heat.
  4. Add sugar, salt, cinnamon, and whole cloves.
  5. Cook uncovered 5–10 minutes, stirring often to prevent bottom from burning. Mixture should thicken while cooking.
  6. Adjust with seasonings.
