Fish Sinigang

This Filipino dish is a sour broth soup that is flavored with tamarind. Simple to make, it can include various kinds of fish or seafood. Sinigang in Filipino means “stewed fish.” What distinguishes this dish from other fish stews is tamarind. Tamarind is a hardwood tree that produces pods with an edible pulp. The flavor is both sweet and tart. Recipes for sinigang vary and can include spinach and rice. Most Filipino immigrants to the United States came in the early 1900s, sharing their authentic recipes.

Ingredients

  • ½ lb tilapia fillets, cut into chunks
  • 1 small head bok choy, chopped
  • 2 medium tomatoes, cut into chunks
  • 1 cup thinly sliced daikon radish
  • ¼ cup tamarind paste
  • 3 cups water
  • 2 dried chile peppers, (optional)

Directions

  1. Combine tilapia, bok choy, tomatoes, and radish in medium-size pot.
  2. Stir together tamarind paste and water and then pour into pot.
  3. Add chile peppers, if using.
  4. Bring to a boil and cook 5 minutes or just until fish is cooked through.
  5. Do not overcook or fish will fall apart.
  6. Ladle into bowls and serve.
