Cream of Tomato Soup

Made from pureed tomatoes and dairy, cream of tomato soup is a classic American dish. Healthy and easy to make, this mildly seasoned soup is frequently enjoyed throughout the country where it is commonly served with a grilled cheese sandwich for a complete meal. On its own, cream of tomato soup can be a light meal or an appetizer, often with garlic bread on the side for dipping.

  1. Place the butter and oil in a frying pan set over medium heat.
  2. Add the onion to the hot oil, and sauté for 2–3 minutes.
  3. Add tomatoes. Cook 10 minutes on low heat, stirring occasionally.
  4. Add tomato paste.
  5. Mix the flour with some stock in a small bowl to make a smooth, lump-free paste and then add it, along with the remaining stock, to the pot.
  6. Simmer 30 minutes, stirring occasionally.
  7. Remove from heat and purée mixture in a blender or food processor.
  8. Return puree to pot set over medium-low heat.
  9. Stir in the sugar, milk, cream, and salt, simmering until hot.
