Raisin Spice Bars

Though the origin of raisin spice bars is unclear, they are a childhood favorite for many people. They’re a chewy and crunchy treat with the complex flavor of four spices. These bars are a variation on spice cake, which stems from traditional English cuisine. One New Hampshire specialty is maple spice cake and dates to the early 1800s.

  1. Heat oven to 375°F.
  2. Grease and flour 9 x 13-inch baking pan.
  3. Combine raisins and water in medium pan and bring to a boil.
  4. Remove from heat and stir in oil. Let cool to lukewarm.
  5. Stir in brown sugar and beaten egg into cooled mixture.
  6. Combine flour, salt, soda, and spices in a medium bowl. Whisk to blend well.
  7. With wooden spoon, beat dry mixture into raisin mixture and stir in nuts.
  8. Pour batter into prepared baking pan and bake for 18–24 minutes.
  9. Cool in pan then cut and serve.
