Prosciutto-Wrapped Asparagus

Prosciutto-wrapped asparagus is an easy-to-make appetizer or side dish. It consists of asparagus spears wrapped with prosciutto before being baked. Prosciutto is an Italian dry-cured pork, generally sliced thin and served uncooked. Traditionally, prosciutto was cured during the winter months, when temperature and humidity were ideal for the process. With asparagus being a spring vegetable, the combination of the two lent itself to a natural pairing.

  1. Preheat the oven to 450°F, line a large baking sheet with foil, and brush the foil with olive oil.
  2. Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip.
  3. Place the wrapped spears on the prepared baking sheet.
  4. Bake for 5 minutes.
  5. Remove the baking sheet from the oven and shake it back and forth to roll the spears over.
  6. Return the baking sheet to the oven for 5 minutes, or until asparagus is tender and prosciutto is crisp.
  7. Serve immediately.
