Jicama Mango Salad

Full of crunchy textures and tart flavors, this salad is a winner during summer months and pairs well with spicy Mexican foods. Jicama is a firm vegetable with a mild flavor that’s reminiscent of apple and water chestnuts. With origins in South America and Mexico, it is also referred to as a Mexican potato or Mexican turnip. If not available at the supermarket, check for jicama at specialty Asian or Mexican markets.

Ingredients

  • 1 large jicama, peeled and cut into matchsticks
  • 1 small red bell pepper, cut into matchsticks
  • 1 large firm mango, peeled and cut into matchsticks
  • ½ red onion, cut into matchsticks
  • ½ cup chopped cilantro leaves
  • 2 limes, juiced
  • ¼ cup honey
  • 1 tsp salt
  • ⅛ tsp cayenne pepper

Directions

  1. Toss together the jicama, red pepper, mango, and red onion in a large bowl. Set aside.
  2. Stir together the cilantro, lime juice, honey, salt, and cayenne pepper in a small bowl.
  3. Pour the lime mixture over the jicama mixture and toss to coat well.
  4. Cover and refrigerate at least 15 minutes.
