Grilled Vegetable Salad

Grilling imparts a smoky flavor and light char, bringing out the subtle flavor of vegetables. It’s easy to do and takes vegetables to the next level. Here, a classic selection of grilling vegetables is enhanced with a tart and savory dressing. Other popular vegetables for grilling include corn, mushrooms, carrots, green beans, and tomatoes.

  1. Preheat grill to medium heat.
  2. Lightly oil grill or grill pan.
  3. Place asparagus, zucchini, squash, onion and peppers on grill or in pan.
  4. Cook vegetables until tender, turning a few times, until slightly charred, 10–15 minutes.
  5. Remove vegetables from grill and cut into bite-sized pieces.
  6. Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper in a small pan.
  7. Place vegetables in large bowl and toss with dressing.
  8. Serve warm or at room temperature.
