Fried Rice

There are as many varieties of fried rice as there are ingredients. Fried rice commonly contains eggs, vegetables, and/or meat, and is usually stir-fried in a wok. The recipe below is a very simple version and is a great way to use up leftover rice. Leftover rice has less moisture, making it better for frying. Adding vegetables and cooked meats or tofu turns this basic side dish into a complete meal.

Ingredients

  • 4 cups cold cooked rice
  • 4 Tbsp vegetable oil
  • 3 beaten eggs
  • Salt, to taste
  • pepper, to taste
  • 1 scallion, finely chopped

Directions

  1. Heat oil in a wok over a high flame.
  2. Add cold cooked rice to wok, breaking lumps of rice into individual grains.
  3. Stir-fry rice until heated through.
  4. Make a well in the center of the rice and pour in beaten eggs.
  5. Stir eggs until scrambled, and then blend with rice.
  6. Add salt and pepper to taste.
  7. Stir-fry for 30 seconds.
  8. Garnish with scallion and serve hot.
