There are as many varieties of fried rice as there are ingredients. Fried rice commonly contains eggs, vegetables, and/or meat, and is usually stir-fried in a wok. The recipe below is a very simple version and is a great way to use up leftover rice. Leftover rice has less moisture, making it better for frying. Adding vegetables and cooked meats or tofu turns this basic side dish into a complete meal.

Directions
- Heat oil in a wok over a high flame.
- Add cold cooked rice to wok, breaking lumps of rice into individual grains.
- Stir-fry rice until heated through.
- Make a well in the center of the rice and pour in beaten eggs.
- Stir eggs until scrambled, and then blend with rice.
- Add salt and pepper to taste.
- Stir-fry for 30 seconds.
- Garnish with scallion and serve hot.
