Fava Bean Salad

Fava beans originate in the Mediterranean region and this salad has notes of popular Middle Eastern flavors in the lemon and parsley. It’s believed they were fed to the builders of Egypt’s pyramids and were known in Europe before America was discovered. Fava beans were introduced to Massachusetts by Italian and Portuguese immigrants and are grown in California as well. Also known as broad beans, they are in season on the East Coast in the spring and early summer. Described as sweet with a mild grassy flavor, they also go well with fennel, mint and quality cheeses.
