Cucumber Raita

  1. In a bowl, mix cucumber, onion, salt, and yogurt.
  2. Grind chilies and coconut to a coarse paste.
  3. Add to yogurt mixture. 
  4. Heat oil and add mustard seeds, cooking a few minutes over 
  5. Cool, then add to yogurt mixture.
  6. Add curry and fresh coriander leaves.
