Atchara

Atchara, also called achara or atsara, is a Filipino pickled dish made primarily of papaya. Atchara commonly accompanies fried or grilled meats, such as pork barbecue. Mixed vegetables are typically included in this preparation. The recipe likely came to America with Asian immigrants where it is served in Filipino American restaurants and homes.

  1. Combine the papaya, bell pepper, and carrot in a colander. Sprinkle with salt and let sweat for 60 minutes. Then, rinse and dry thoroughly.
  2. Blanch and drain cauliflower.
  3. Combine the papaya, bell pepper, carrot, and cauliflower in a large bowl.
  4. Bring the vinegar, salt, and sugar to a boil in a non-reactive pot and cook for 2 minutes.
  5. Pour the mixture over the vegetables.
  6. Serve immediately or chill before serving.
