Nigerian Salad

In this simple yet filling salad, baked beans, potatoes, eggs, and mixed vegetables are tossed in mayonnaise for uniquely flavored dish packed with nutrients. Nigerians typically serve it as a tasty accompaniment to meat dishes. However, this tasty salad may also be enjoyed as a full meal on its own by adding pasta or pieces of tender cooked meat.

  1. Scrub the potatoes. Add them to a large pot and cover them with water.
  2. Bring the pot to a boil and then reduce heat. Simmer for 12­–15 minutes, or until the potatoes are tender.
  3. Drain the potatoes and refrigerate to cool.
  4. Once potatoes have cooled, peel them and cut them into bite-sized pieces.
  5. Layer the following ingredients in a large salad bowl: potatoes, lettuce, carrots, cucumbers, baked beans, sweet corn, and plum tomatoes. Finish with the sliced eggs on top.
  6. Refrigerate until serving.
  7. To serve, add mayonnaise and stir well. Serve chilled.

Notes

A substitute dressing can be made from equal parts mayonnaise and ketchup, with a dash of vinegar.
