Musaengchae (Radish Salad)

White radish salad, a cold dish, is generally served in small quantities and is one of the most popular Korean side dishes. The simple recipe includes kochukaru, a chili powder that adds a hot spice to many Korean dishes. Musaengchae uses daikon, a large white radish that is in season during the winter.​ Favorite Korean dishes like this one arrived in America through Korean immigrants.

  1. Toss radish strips with kochukaru (chili powder).
  2. Add sugar, salt, scallion, and garlic. Toss well.
  3. Add a little vinegar and mix well.
  4. Continue to add vinegar, tasting occasionally, until flavors are balanced.
