Irish Pub Salad

Many good celebratory meals in Ireland start with a salad, often an Irish pub salad. It could practically be a meal unto itself and belies many preconceived notions against salads. The egg and cheese in this dish make it filling, and the tarragon dressing adds a savory element.   1. In a large bowl, combine all salad ingredients. Refrigerate until ready to serve.

  4. Grate the cheese into the dressing, or cube and incorporate throughout.
  5. To serve, pour the dressing over the salad and toss well.
