Hearts of Palm Salad

The inner core of palm trees, hearts of palm are mild in flavor with a firm crunchiness. Popular in tropical and subtropical regions, where palm trees grow, hearts of palm salads often feature regional ingredients such as avocado and sliced green and black olives. In the United States, hearts of palm are imported primarily from Costa Rica and Hawaii. A simple salad with a tart lime dressing, this recipe is based on a Brazilian version.

  1. In medium bowl add palm, tomatoes, white or yellow onion, and green onions.
  2.  In small bowl whisk together lime juice, olive oil, and salt and pepper.
  3. Pour over vegetables and toss gently to coat.
  4. Serve.
