Hawaiian Spinach Salad

Classic spinach salad gets a lively upgrade with the sweet and salty additions of ham and pineapple. The exact origins of spinach salad are unclear but likely began with German immigrants to America. They served a special, springtime salad that included dandelion greens, vinegar and eggs, which were usually poached or hard boiled. An early spring crop, spinach eventually replaced dandelion greens. Spinach salads have become an American classic. Hard boiled eggs are not included in this recipe but they can be easily added.
