  1. Peel and section grapefruit to get 1½ cups of sections. Reserve 2 tablespoons grapefruit juice.
  2. Combine grapefruit, onion and thyme in a large bowl.
  3. Whisk together reserved grapefruit juice, vinegar, olive oil, honey, fennel seeds, and salt in a small bowl.
  4. Add salad greens and dressing mixture to grapefruit mixture. Toss well.
  5. Serve immediately.
