  1. Shred the celery roots, onion, and apples into a bowl. Mix well.
  2. Whisk together the vinegar, lemon juice, mayonnaise, mustard, dill, garlic salt, and pepper in a separate bowl.
  3. Pour the dressing over the shredded vegetables, tossing to combine
  4. Cover and refrigerate for 60 minutes.
  5. Add the olive oil and additional vinegar to taste, tossing to combine.
  6. Serve chilled.
