Carrot Raisin Salad

The carrot salad, a great showcase for sweet carrots, is popular throughout the United States. The cool and crunchy recipe shown here includes chewy raisins and is a favorite in the state of Maryland. Though used here, some recipes omit the pineapple.

  1. Drain excess liquid from carrots and place in a salad bowl.
  2. Drain the canned pineapple and cut the chunks into smaller pieces. Add to  bowl with carrots.
  3. Add in raisins and toss well.
  4. Combine lemon juice, mayonnaise, sugar, and salt in a small bowl. Mix well and pour the dressing over the carrots.
  5. Mix again and refrigerate for about 30 minutes.
