Ingredients

Salad:
  • 1 red apple
  • 1 green apple
  • 6 cups salad greens (a combination of arugula and baby spinach, or any spring green mix)
  • 1 cup walnuts, roughly chopped
  • ⅓ cup feta cheese, crumbled
  • ⅓ cup dried cranberries
Dressing:

Directions

    For Salad:
  1. Core and chop apples into either thin slices or 1-inch chunks.
  2. In a large bowl, toss lettuce, apples, walnuts, feta and cranberries together.
  3. For Dressing:
  4. In a small bowl whisk all the dressing ingredients together.
  5. Pour over salad and toss well.
  6. Serve.
