Fried Virginia Ham and Mashed Cauliflower Potatoes

The state of Virginia is famous for its Virginia ham, alternately known as country ham, or Virginia country ham. These are bone-in hams that are cured with salt. Virginia ham is delicious sliced and pan-fried and pairs especially well with a savory preparation of cauliflower and mashed potatoes, as in this recipe.

Directions

  1. Bring a large pot of water to a boil. Add a pinch of salt.
  2. Peel and dice potatoes and cook them in boiling water until tender but not fully cooked, about 4-6 minutes. 
  3. Cut out the stem and core of the cauliflower and separate into florets.
  4. Place cauliflower florets into pot with potatoes and cook until both are fork tender about 5-7 minutes.  
  5. Drain the potatoes and cauliflower and mash them with a potato masher.
  6. Mix in butter, cream cheese, sour cream, green onion, Parmesan cheese, cheddar cheese, and crumbled bacon.
  7. Slice ham and fry over medium high heat in a skillet, roughly 2–3 minutes, until caramelized. Add butter or oil if needed. 
  8. Add salt and ground black pepper to taste.
