Shrimp Scampi

Shrimp scampi is one of those creations in which immigrant cooks adapted Italian techniques to American ingredients. Scampi is the name of an edible lobster species, but due to its scarcity, shrimp is often substituted for scampi. Today shrimp is the most commonly used seafood in this dish, which is still known by the name of its original ingredient. The Italian word scampi may be derived from the Greek καμπή—kampē—meaning "bending" or "winding," referring to the shape of the seafood. Scampi sauce refers to the garlic butter and wine or lemon sauce which coats the shrimp. It is most commonly served with pasta.

Ingredients

  • 2 Tbsp olive oil
  • 5 Tbsp butter
  • ¼ tsp ground red pepper
  • 1 lb uncooked shrimp, peeled and deveined
  • 3 garlic cloves, finely minced
  • ½ tsp salt
  • ¼ cup chopped parsley, divided
  • Juice from 1 lemon

Directions

  1. Heat skillet over medium heat. Add olive oil and butter to skillet. When oil and butter is bubbly, add ground red pepper. Stir constantly for 30 seconds.
  2. Toss in shrimp, minced garlic, salt, and half of the parsley. Continue to stir for 2 minutes.
  3. Add lemon juice and cook, stirring for 1 more minute. Remove from heat.
  4. Serve warm over pasta, and garnish with remaining pasta.
