Rouladen (Meat Rolls)

Rouladen is an easy contender for one of Germany’s favorite dishes, and with a recipe that includes steak, pickles, and bacon, there is not much to dislike about the dish. These meat rolls make a hearty dish with complex but well-balanced salty, tart, and savory flavors that are perfectly complemented by a starchy side. While the long, slow cooking time might be a deterrent to some cooks, these rolls are very easy to make and definitely worth the investment.

  • 1½ lb flank steak
  • Stone ground mustard, to taste
  • ½ lb thick sliced bacon
  • 2 large onions, sliced
  • 1 lb dill pickles, sliced

  3. Heat butter in a skillet over medium heat. Place the rolls in the pan and sauté for a few minutes until browned on each side.
  4. Add water and bouillon cube to pan, stirring until seasonings dissolve.

  6. Serve with spaetzle or red cabbage with apples on the side.
