Pork Tenderloin

Pork tenderloin is easy to prepare and works well with most side dishes. Pigs came to Florida with Spanish explorers in 1539 and proved cheaper to raise than cattle. Before industrialized farming began in the 20th century, pork was traditionally eaten in the fall, after the pigs fattened up over the summer. Since then, pork firmly established itself as an American staple and is one of the most popular meats. Many cuts from the pig are tender and versatile to prepare.

  1. Preheat oven to 400°F.
  2. Lightly grease a large baking sheet or casserole dish.
  3. Pierce tenderloin all over with fork and rub oil onto all sides of meat.
  4. Mix Italian seasoning, garlic powder, cumin, salt, chili powder, paprika (if using) and pepper in small bowl.
  5. Sprinkle spice mixture over tenderloin, patting onto surface on all sides.
  6. Place tenderloin in prepared baking dish and drizzle lemon juice over top.
  7. Bake for 25–35 minutes until outside of loin is browned and crispy and center is cooked through to desired doneness.
  8. Spoon juices from dish over meat and allow to rest on cutting board 5–10 minutes before slicing.
  9. Cut into 1-inch pieces and drizzle with remaining juices.
