Pork Adobo

Cooking meat adodo means to prepare it in a sauce or marinade made with vinegar and spices. This practice traces to Spain and Portugal and found its way to the Southwest United States through Spanish explorers. Using vinegar also acted as a preservative for food when convenient refrigeration was not possible. Adobo dishes are popular in the Southwest today and are a specialty in New Mexico.

Ingredients

  • 2 lbs pork belly or pork shoulder, cut into bite-sized pieces
  • 2 Tbsp vegetable oil
  • 3 cloves garlic, chopped
  • ⅓ cup light soy sauce
  • ⅓ cup vinegar
  • 1 bay leaf
  • ½ tsp freshly ground pepper
  • 1 cup water or more as needed
  • 1 Tbsp honey or brown sugar
  • Cooked rice, for serving

Directions

  1. Heat oil in large pan and rotate pan to coat sides.
  2. Add pork pieces and cook until meat is browned, about 4–5 minutes.
  3. Add garlic and cook 1 minute. Add soy sauce, vinegar, bay leaf, pepper, and water.
  4. Bring to a boil and then reduce heat and simmer 45 minutes or until pork is tender. Add water ½ cup at a time as pork cooks, until a desired amount of sauce is made. Do not allow pork to dry out—watch carefully.
  5. Stir in honey or brown sugar.
  6. Serve over cooked rice.
