Neck Bones

Eating neck bones dates to slavery in the United States, when African Americans made do with animal parts their owners threw away. Often smoked, neck bones are slow roasted to ensure tenderness. They may also be used as flavoring for vegetables including beans and peas. Some recipes for neck bones have them simmered in water, to which macaroni is added.

  1. Preheat oven to 375°F.
  2. Sprinkle ¾ of onion and garlic into bottom of roasting pan.
  3. Pour in vinegar and water.
  4. Season neck bones with salt and pepper and add to roasting pan.
  5. Sprinkle remaining onion and garlic over bones. Cover pan tightly with foil.
  6. Bake 2 hours, basting every 30 minutes with liquid from roasting pan. Recover pan with foil after each basting.
  7. After 2 hours remove foil and continue baking 45 minutes or until neck bones are golden brown.
