Navajo Tacos

In the early days of the American Southwest, cultural exchanges between Navajos and Mexicans was common. Navajo culture was historically influenced by Spanish contact as well and co-exists with Latino cultures in the Southwest today. Navajo tacos are a signature Indian-Mexican fusion dish, with toppings including lettuce, cheese, beans, tomatoes, onions served on a base of fry bread. The meal is easy to prepare and customize to individual preferences.

Ingredients

  • 4 pieces of fry bread
  • 2 cups cooked pinto beans
  • 2 cups lettuce
  • Shredded ground chile peppers, to taste (optional)
  • 2 medium tomatoes, diced
  • 2 medium onions, diced
  • ½ lb shredded cheddar cheese
  • Chili sauce, as needed for serving (optional)

Directions

  1. Plate each of the pieces of fry bread.
  2. Layer on the beans, fresh vegetables, and cheese.
  3. Serve with chili sauce on the side.
