Meatball Soup

Many soups throughout the world include meatballs. A combination of lean and fatty meat increases a meatball’s flavor and they can be made with many different meats. Meatballs are likely Persian in origin, coming from the area of modern-day Iran. There, kofta is a type of meatball made with minced or ground meat, spices, and onion. Common additions in meatball soup are pasta, dumplings or grains.

Ingredients

1 tsp Italian seasoning, crushed
  • ⅔ cup ditalini or orzo pasta
  • 2 cups frozen vegetables

Directions

  1. Cook onion and garlic in oil in large saucepan or pot over medium heat, 5–8 minutes.
  2. Add prepared meatballs and beef broth. Cook 10 minutes.
  3. Add tomatoes, seasoning, pasta, and frozen vegetables.
  4. Simmer, covered, 15 minutes or until pasta is cooked.
