Kroketten

Kroketten, or croquettes, originated in French cuisine. The individual-size fried rolls typically consist of a seasoned ground meat mixture coated in breadcrumbs. Other common fillings include cheese, mashed potatoes, vegetables, and fish. The dish gained popularity during the 18th century in the Netherlands where today kroketten are mass produced, sold ready-made from fast food chains and snack bars, and consumed as street food. Dutch McDonald’s restaurants even created a burger with a kroket-patty called the McKroket.

  1. Place ground veal in a skillet over medium heat. Cook, stirring to crumble, 7–10 minutes until evenly browned. Set aside.
  2. Melt butter in a saucepan over low heat.
  3. Stir in 4 tablespoons of flour until smooth and cook for about 2 minutes.
  4. Stir in milk and chicken broth to make a smooth thick sauce.
  5. Stir in the cooked ground veal, paprika, salt, pepper, Worcestershire sauce, parsley, chili powder, and curry powder, if using.
  6. Remove mixture from heat and let it cool to room temperature, about 30 minutes.
  7. Shape cooled mixture into cylinders 3–4 inches long and 1½ inches wide.
  8. Press a strip of Gouda cheese into the center, making sure it is surrounded by meat. This step is optional.
  9. Whisk together the egg and water in a small bowl.
  10. Place breadcrumbs and ½ cup flour each on a separate plate or shallow dish.
  11. Coat croquettes with flour, dip in the egg, and then roll in the breadcrumbs to coat. Repeat the coating process if a thicker breading is desired.
  12. Heat oil in a large skillet over medium-high heat or in a deep-fryer.
  13. Fry croquettes for about 10 minutes until golden brown on all sides.
  14. Transfer croquettes to paper towel to drain and then serve hot.
