Hot Lobster Roll

This Connecticut-style recipe is a favorite, with its lemony butter sauce coating succulent lobster. Generally speaking, a lobster roll served warm is called a lobster roll, while a lobster roll served cold is called a lobster salad roll. Other variations use a mayonnaise-based dressing, which is referred to as New England-style when celery is included. Whichever way you like it, lobster rolls are a simply delicious classic.

Directions

  1. Place about 2 inches of water in a large pot.
  2. Add salt and bring to a boil over medium heat.
  3. Place lobsters into steamer, cover, and steam until the lobsters turn bright red, roughly 8–10 minutes.
  4. Remove lobsters from steamer with tongs and run them under cold water.
  5. Remove lobster meat from shells and chop roughly.
  6. Melt butter in a saucepan with the juice of the lemon and paprika.
  7. Remove from heat, stir in the lobster meat, and season to taste with salt.
  8. Divide evenly between the 4 hot dog buns, or other preferred bread roll, and serve warm.

Notes

This recipe also works well with monkfish or lump crab meat.
