Green Papaya Salad with Beef Jerky

Fresh produce combined with grilled, dried beef topped with a sweet, sour, salty, and spicy dressing—this popular Vietnamese salad has a lot of flavor. Called gỏi du dủ in Vietnamese, this dish is a medley of shredded green papaya and grilled beef jerky served with a sweet-sour-salty gỏi sauce.

  1. Dissolve the salt in 4 cups of water, add the papaya, and let rest for 15 minutes.
  2. Drain the papaya and squeeze to remove excess liquid.
  3. Combine the papaya and basil leaves in a large bowl, tossing to mix. 
  4. Stir together the sugar, ½ cup water, and lime juice in a small bowl, until the sugar dissolves.
  5. Add the fish sauce and sweet chili sauce, stirring to combine. 
  6. Pour the dressing over the papaya and basil, tossing to coat.
  7. Grill the beef jerky quickly just until warm and then cut it into thin strips to match the papaya strips.
  8. Divide the salad among serving platters and top each with beef jerky.
