Gored Gored (Stewed Beef)

Gored gored is a simple dish that involves searing beef cubes in niter kibbeh—Ethiopia's ubiquitous seasoned clarified butter—and a sauce called awaze. Composed of the berbere spice blend, oil, wine, and a number of other spices, awaze is not easy to find outside of Ethiopia; check African markets in larger American cities. For authentic gored gored, the beef should be seared but not cooked. Ethiopian immigrants to the United States brought their traditional recipes, like gored gored, with them.

Ingredients

  • 2 lbs tender beef
  • 4 Tbsp niter kibbeh (seasoned clarified butter)
  • 4 Tbsp awaze sauce
  • Injera and/or cooked rice, as needed for serving

Directions

  1. Cube beef using a sharp knife.
  2. In a medium skillet, melt niter kibbeh at low heat.
  3. Add awaze sauce to melted butter and stir to combine.
  4. Add beef to skillet and increase heat to high.
  5. Sear beef cubes for 1–3 minutes, stirring so that all sides of meat come in contact with the pan. The meat should remain rare inside.
  6. Add salt to taste.
  7. Serve with injera flatbread and/or rice.
