Broiled Salmon

Salmon is a prominent fish species found in the waters of North America. Native Americans were first to use this natural resource for food in what is now the United States. By the mid-1800s, commercial fishing for salmon began along the Pacific Northwest’s Columbia River. Today salmon remains an integral part of American cuisine. It can be cooked in a variety of ways such as roasted, grilled, smoked, pan-seared, and broiled, like in this recipe that includes a buttery wine sauce and fresh herbs.

  1. Preheat oven broiler and set oven rack about 6 inches from heat source.
  2. Line a baking sheet with foil and grease the foil using nonstick cooking spray.
  3. Combine garlic and olive oil in small microwave-safe bowl and heat on high for 1½ minutes.
  4. Melt butter in saucepan over low heat and then stir in garlic oil mixture.
  5. Remove pan from heat and stir in Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
  6. Place salmon fillets skin side down in pan. Spoon about ⅓ of the butter sauce over fillets and sprinkle evenly with fresh dill.
  7. Broil in preheated oven for 3 minutes.
  8. Turn fillets over, skin side up, and baste them with another ⅓ of butter sauce.
  9. Broil for another 3 minutes.
  10. Turn fillets again and baste with remaining butter sauce.
  11. Broil until fish flakes easily with fork, about 3 more minutes.
  12. Remove fish from broiler and serve immediately.
