Baked Cod

Cod is the common name for several fish species belonging to the Gadidae family such as haddock, pollock, and whiting. The two most common species of cod are Atlantic cod, found in the cold water of the northern Atlantic Ocean, and Pacific cod, found in the northern Pacific Ocean. The mild flavor of cod’s dense, flaky, white meat, as well as its many nutritional qualities, make it a popular choice of cooks and diners. Cod can be prepared in a variety of ways such as smoked, dried, baked, stewed, fried, or sautéed, and can be incorporated into a wide array of dishes.

  1. Preheat the oven to 400°F. Line a baking sheet with foil and lightly brush the foil with olive oil or use nonstick cooking spray.
  2. Combine the parsley, garlic, lemon zest, salt, and breadcrumbs in a shallow plate or bowl.
  3. Brush the top of each filet with olive oil.
  4. Press the filets into the crumb mixture and then place them in the baking dish, crust-side up.
  5. Bake the fish for about 12–15 minutes or until firm, depending on the thickness of the fish.
  6. Remove the fish from the oven and serve with lemon wedges.
