Water ice is a smooth, cool summer treat that is a Pennsylvania specialty. Italian ice is similar and more widely available, although Rita’s Water Ice, a company that started in Pennsylvania, now has more than 600 locations throughout the United States. Water ice is flavored with fresh fruits before it is frozen, as opposed to snow cones, which are basically crushed ice with flavored syrup poured on top.

							Ingredients
- 3 cups chopped pineapple and/or halved strawberries
 - 2 Tbsp sugar
 - 2 Tbsp honey
 - 1 Tbsp fresh lemon juice
 - 3 cups ice, divided
 
Directions
- Add fruit, sugar, honey and lemon juice with 2 cups of the ice in a food processor or blender and mix until chunky.
 - Add another 1 cup of ice and blend until the mixture is smooth.
 - Pour the mixture into a shallow baking dish and freeze for 30 minutes.
 - Scrape the ice with a fork until slushy, then freeze again until firm, about 2 more hours.
 - Scoop each serving into a paper cup.
 
Notes
Optional: Other types of fruits, such as peaches, pears, raspberries, or blueberries, can also be used.
