Sherbet

Sherbet is a frozen, creamy treat that resembles ice cream. It is sometimes served between multi-course meals as a way to refresh the palate. The word sherbet is derived from the Persian word sharbat, which means "iced fruit drink." Unlike sorbet and Italian ice, sherbet includes dairy. In the US, sherbet must contain a minimum of 1 to 2 percent milkfat from milk or cream. Sherbet makes a light and refreshing dessert and comes in a variety of flavors.   1. Combine the fruit and sugar in a small bowl and let sit for about 10 minutes, stirring occasionally until the sugar has begun to dissolve.
  2. Pour the fruit mixture into a blender and process until smooth.
  3. Combine the buttermilk, half and half, lemon juice, vanilla, and salt in a medium bowl. Press the berry mixture through a sieve into the bowl. Stir, cover, and chill the mixture in the refrigerator for at least 60 minutes or until it reaches 40°F or below.
  4. Whisk the sherbet mixture and pour it into the canister of an ice cream maker.
  5. Process the sherbet until it is the consistency of soft serve ice cream. It can be served immediately or placed in the freezer for about 3 hours until firm.
