This easy dessert originated with early English settlers to the United States. When they couldn’t find their favorite ingredients, they improvised with what was available, creating new dishes or recipe variations. Changing the placement of the fruit, either at the bottom or in the middle of the cobbler, results in crisps and Brown Bettys. In the South, cobblers generally are made with a single fruit type and are often topped with a scoop of vanilla ice cream. Cobblers can be made with many kinds of fruits, all of which create a satisfying dessert.

							Ingredients
- 2 cups all-purpose flour
 - 1 cup white sugar
 - 2½ tsp baking powder
 - ½ tsp salt
 - 3 Tbsp butter, melted
 - ⅔ cup milk
 - 1 tsp vanilla extract
 - 1 egg, beaten
 - 2 cups raspberries
 
Directions
- Preheat oven to 350°F.
 - Grease a 9 x 9-inch baking dish.
 - Combine flour, sugar, baking powder, and salt in a large bowl.
 - Stir in butter, milk, vanilla, and egg until smooth.
 - Fold in raspberries and pour into prepared dish.
 - Bake 35–40 minutes, until top is firm.
