Krumkake is a delicate cone-shaped Norwegian wafer-like cookie traditionally served with coffee during the Christmas season. It is made from a thin batter that’s poured onto a hot krumkake iron and cooked until golden-brown before being wrapped around a cone form and hardening to a crisp. Scandinavian immigrants brought the recipe with them to the United States where it remains popular in the Midwest. The cookies can be eaten plain, dipped in melted chocolate, or stuffed with a filling such as fruit or whipped cream.

							Ingredients
- ½ cup unsalted butter
 - 1 cup sugar
 - 2 eggs
 - 1 cup milk
 - 1½ cups all-purpose flour
 - ½ tsp vanilla extract
 - Nonstick cooking spray, as needed to grease iron
 
Directions
- Preheat a krumkake iron.
 - Cream together the butter and sugar in a bowl.
 - Add the eggs, one at a time, mixing well.
 - Stir in the milk, flour, and vanilla.
 - Grease the krumkake iron using nonstick cooking spray.
 - Pour a teaspoon of the batter onto the hot iron and press it closed.
 - Cook for about 30–40 seconds on each side or until golden-brown on both sides.
 - Remove the krumkake from the iron and quickly wrap it around a cone form before it hardens.
 - Repeat steps five through eight until all the batter is used.
