Hot Milk Cake

Hot milk cake is a traditional Southern dessert that originated in America during the Great Depression. Similar to a classic vanilla cake, hot milk cake is made from simple ingredients that are commonly on-hand. It has a moist, fluffy texture and buttery flavor with a hint of vanilla. Although delicious on its own, hot milk cake can be topped with fruit and whipped cream.

  1. Preheat the oven to 350°F and grease a 13 x 9-inch baking dish using nonstick cooking spray.
  2. Place the eggs in a large bowl and beat them for at least 5 minutes using an electric mixer on high speed.
  3. Add the sugar gradually, beating until light and fluffy.
  4. Beat in the vanilla.
  5. Whisk together the flour and baking powder in a small bowl and gradually add it to the batter, beating on low speed until smooth.
  6. Combine the milk and butter in a small saucepan and heat it just until the butter melts.
  7. Add the milk mixture to the batter gradually, beating just until combined.
  8. Pour the batter into the prepared dish and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove the cake from the oven, sprinkle it with powdered sugar, and set it on a wire rack to cool.
