Honey Dabo Kolo (Fritters)

Dabo kolo (barley breads) are small fritters sold by Ethiopian street vendors. Made from barley flour, they make popular snacks. This dessert adaptation of dabo kolo using ayib, a fresh cheese from Ethiopia similar to spiced cottage cheese, drizzled with honey is perfect with rich Ethiopian coffee.

  1. Lightly whisk cheese. Add eggs individually, whisking after each addition.
  2. Whisk in flour, baking soda, salt, ghee, and orange zest.
  3. Cover and let rest for 60 minutes.
  4. In a medium skillet, heat oil over  medium heat.
  5. Drop spoonfuls of batter into pan, frying to a light gold. Drain on paper towels.
  6. Drizzle with warm honey and serve.
