Halva is a glutinous sweet made with cornstarch and lots of sugar. It is flavored with cardamom, saffron, and nutmeg. Some recipes add nuts or seeds. In Eastern Africa halva, also known as xalwa, is a beloved treat typically served with strong coffee at weddings, holidays, and in homes to welcome guests. It was introduced to America by immigrants where variations are served in Middle Eastern and East African communities.

							Ingredients
- 4 cups water
 - 1⅓ cups brown sugar
 - 8¾ cups sugar
 - 2½ cups cornstarch
 - 1⅛ cup ghee
 - 1 tsp ground cardamom
 - 1 whole nutmeg, ground
 - Pinch of saffron
 - 1 tsp instant coffee
 - Almonds and/or pistachios, crushed or slivered for garnish (optional)
 
Directions
- Boil the water in a large saucepan.
 - Add sugar and cook over medium heat.
 - In a small bowl, combine cornstarch, coffee, and water. Mix to form a smooth paste.
 - When the sugar and water boil, add the cornstarch mixture. Stir well.
 - Add the cardamom, nutmeg, saffron, ghee, and nuts. Stir continuously until xalwa thickens and the oil separates from the mixture, about 60 minutes.
 - Pour the xalwa onto a greased flat serving tray. Spread evenly.
 - Garnish with slivered nuts.
 - Cut into square or diamond shapes.
 - Serve when cool.
