Derby Pie

This recipe was created in 1950 at the Melrose Inn of Prospect, Kentucky. It is traditionally associated with the Kentucky Derby and has been served there for more than 50 years. Despite this, the name of the recipe was literally pulled from a hat, as the recipe’s creators could not agree on a name for it. This creamy pie includes nuts and chocolate chips in a rich, creamy filling, with variations including other nuts of choice.

  1. Preheat oven to 350°F.
  2. Set pie crust in a baking pan.
  3. Beat eggs, brown sugar, corn syrup, flour, butter, sugar, bourbon, and vanilla extract in a large bowl with a mixer set on low speed, for about 2–4 minutes.
  4. Add the chocolate chips and pecans to the bowl of batter, and gently fold them in using a spatula.
  5. Pour the mixture into the pie crust.
  6. Wrap any exposed pie crust with foil to prevent over browning.
  7. Place pie on a baking sheet and bake for 50–60 minutes. If foil is being used, remove foil after 30 minutes and continue baking for another 20–30 minutes.
  8. Remove pie from oven and let cool for about 10 minutes.
  9. Serve warm or chilled. Refrigerate unused portions.
