Chocolate Mousse

Chocolate mousse is a rich dessert featuring a silky smooth texture and sweet flavor. Mousse, which means “foam,” is made light and fluffy by air bubbles trapped in the batter when it's beaten. It originated in France in the 18th century, with chocolate brought to Europe by Spaniards after learning of its use by the Aztecs. Mousse recipes traveled to America with Eastern European immigrants where the dish was well received and continues to be served across the country.

Ingredients

  • 3 bars (4 oz each) bittersweet chocolate, broken into pieces
  • ½ cup sugar
  • ⅓ cup strong coffee
  • egg yolks
  • 1 cup whipping cream, divided
  • 2 Tbsp orange liqueur
  • ½ tsp vanilla extract
  • Whipped cream, as needed for serving (optional)

Directions

  1. Add first three ingredients to medium saucepan. Cover and stir constantly over low heat. Remove from heat.
  2. Beat egg yolks well and stir in ¼ of whipped cream. Whisk one-forth of chocolate mixture into egg mixture; whisk back into remaining chocolate mixture.
  3. Cook while stirring constantly over medium-low heat until thermometer reads 160°F. Remove from heat.
  4. Stir in orange liqueur and vanilla. Cool to room temperature, stirring occasionally.
  5. Beat remaining whipped cream, about ¾ cup, until soft peaks form.
  6. Fold one-fourth whipped cream into cooled chocolate mixture. Fold in remaining whipped cream.
  7. Spoon mixture into serving dishes. Cover and chill.
  8. Serve topped with whipped cream, if using.
