Butter Cookies

The word cookie comes from the Dutch koekje meaning “little cake.” The earliest cookies were reportedly enjoyed by the Persian Empire as early as the from the 7th century. According to some, cookies came to Europe as a part of the spice trade. They also returned with the crusades. Others tell that cookies came about as “temperature testers.” Cooks would dab a small amount of cake batter in their ovens to test that the oven was hot enough. This small bit of cooked dough evolved into the cookies we know today.

  1. Preheat oven 350°F. Grease two baking trays.
  2. Beat butter and sugar to a soft consistency.
  3. Beat in egg to create a fluffy, light-yellow batter.
  4. Fold in flour gradually, then add the corn flour, and finally the vanilla.
  5. Roll dough into a ball, wrap with plastic and chill 30 minutes.
  6. Roll out dough on a floured surface to an ⅛-inch thickness.
  7. Cut into 3-inch rounds. Place on trays.
  8. Bake 15 minutes until light gold.
  9. Remove and allow to cool on a wire rack for 15 minutes.
