Bread Pudding

Bread pudding is a classic dessert with humble beginnings. In the early 11th century, thrifty cooks re-purposed old and stale bread to create this creamy comfort food. In England, the dish was known as “poor man’s pudding” and incorporates other items that keep well, such as dried fruit, spices, and citrus. The practice of making bread puddings traveled with European colonists to America. Today, while bread pudding remains a practical way to create a dessert from leftovers, the dish has found its way onto the menus of many restaurants.

  1. Preheat oven to 350°F. Butter an 8-inch square glass pan.
  2. Soak bread cubes in milk, using fingers to squeeze them into the milk.
  3. In a separate bowl, whisk eggs and sugar to make a thick foamy froth.
  4. Stir in vanilla, cinnamon, nutmeg, salt, and raisins.
  5. Stir in soaked bread cubes. Let stand for 10–15 minutes before pouring into buttered dish.
  6. Bake 45–50 minutes to a firm, light-gold.
  7. Cool, and serve warm.
