Potato Bread

Irish potato bread is a recipe that does not require the time investment of a traditional risen loaf. Since it is made without yeast, there is no need to let the dough rise or to knead it multiple times. Potato bread has a crunchy crust on the outside while staying fluffy and moist on the inside. Introduced to America by Irish immigrants, potato bread can be found in many US bakeries today and is especially popular in Irish American communities

Ingredients

  • ¾ cup cooked, mashed potatoes
  • ¾ cup raw potatoes, peeled, grated, and drained
  • 1 egg
  • egg white
  • ⅓ cup vegetable oil
  • ¾ cup milk
  • ½ cup Parmesan, grated
  • ½ tsp garlic powder
  • 3¼ cups all-purpose flour, plus extra to dust work surface
  • 1½ Tbsp baking powder
  • 1 tsp salt
  • Nonstick cooking spray, as needed to grease pan

Directions

  1. Combine the grated potatoes and mashed potatoes in a large mixing bowl.
  2. Add the egg, egg white, vegetable oil, milk, Parmesan cheese, and garlic powder. Whisk until all ingredients are well mixed.
  3. Combine the flour, baking powder, and salt in a separate bowl, mixing well.
  4. Add the flour mixture to the potato mixture, stirring until well combined.
  5. Preheat the oven to 375°F and grease an 8-inch circular cast iron pan using nonstick cooking spray.
  6. Knead the dough a few times on a floured work surface, roll it into a ball, and then place it in the cast iron pan.
  7. Cut an “X” on the top of the dough and bake for about 50 minutes. The top should be golden-brown.
  8. Remove from oven and let cool in pan for about 10 minutes. Run a knife along the outside of the pan to release bread. Let completely cool before slicing.
