Pan Dulce

Pan dulce are Mexican sweet buns typically enjoyed for breakfast, snacks, or late suppers. Freshly made by street vendors and pastelerias or panaderias (bakeries) across Mexico, these treats also can be made at home. Pan dulce come in a seemingly endless variety of shapes and sizes, with many additional ingredients, fillings, and toppings.

Ingredients

  • ½ cup warm milk
  • 2 tsp active dried yeast
  • 3 cups bread flour, plus extra to dust work surface
  • 4 Tbsp sugar
  • 2 Tbsp lard or butter
  • 2 eggs, beaten
  • Nonstick cooking spray, as needed to grease baking sheet

Directions

  1. Activate the yeast by dissolving it in warm milk. Allow to rest for about 10 minutes in a warm spot.
  2. Sift 3 cups flour and sugar into mixing bowl.
  3. Add the lard or butter followed by the eggs, mixing until a sticky dough forms.
  4. Shape the dough into a ball, place it on a floured surface, and sprinkle it with flour.
  5. Cover the dough and let it rest for 30 minutes.
  6. Preheat the oven to 400˚F and grease a baking sheet using nonstick cooking spray.
  7. Divide the dough into 12 pieces, shape each piece into a ball, flatten them slightly to make a bun shape, and then place them on the baking sheet spaced apart.
  8. Bake 15–20 minutes to a light gold.
  9. Serve warm.
