Monay Rolls

Monay rolls originated in the Philippines where they are popular as a snack and for breakfast. This classic Filipino bread can be eaten with a meal or on its own, plain or spread with butter and jam. Monay rolls also are used to dip in savory sauces and as buns for sandwiches. Asian immigrants likely introduced the recipe to America, where it is served in Thai restaurants and made in Thai American homes.

Ingredients

  • 4 cups bread flour
  • 1½ tsp salt
  • ½ cup powdered milk
  • 1 Tbsp dry active yeast
  • 1½ cups warm water
  • ½ cup sugar
  • 2 Tbsp melted butter
  • 3 egg yolks, divided 
  • Nonstick cooking spray, as needed to grease baking sheet

Directions

  1. Combine the flour, salt, and powdered milk in a mixing bowl.
  2. Mix the yeast and warm water in another bowl. When yeast is activated with bubbles coming up, add the sugar and stir to dissolve.
  3. Add melted butter and 2 yolks.
  4. Make a dent in the center of flour mixture and gradually pour in the butter mixture.
  5. Knead dough into a pliable ball, cover it with a damp cloth, and let rest for 2 hours.
  6. Preheat over 375°F and grease a baking sheet using nonstick cooking spray.
  7. Knead dough for 5 minutes, roll into a log, and cut into ½-inch thick rounds. Place on tray.
  8. Whisk the remaining yolk in a small bowl and use it to brush the dough.
  9. Bake for 20 minutes, until golden-brown.
