Flatbread

Flatbread is a type of bread in which wheat flour forms a dough that is flattened before being baked. Christopher Columbus, as well as Spanish conquistadors, brought wheat to the New World in the early 1500s. Many flatbreads are unleavened, although some, such as pita bread, are slightly leavened. Other examples of flatbread include tortillas, matzo, injera, chapati, naan, and lavash. Many cultures use flatbread as a utensil for scooping up food from a common serving platter. Flatbread also can be stuffed like a sandwich, wrapped around other food, or eaten by itself.

Ingredients

  • 3½ Tbsp butter
  • ¾ cup milk
  • 2 cups all-purpose flour, plus extra for dusting
  • ½ tsp salt
  • ½ Tbsp oil, for frying

Directions

  1. Combine the butter and milk in a saucepan or microwave-safe bowl and heat just until the butter is melted.
  2. Add the flour and salt, mixing until combined.
  3. Transfer the dough to a floured surface and knead it for a few minutes or until it is smooth. Add more flour if it is too sticky.
  4. Wrap the dough loosely with plastic wrap and let it rest at room temperature for about 30 minutes.
  5. Unwrap the dough and place it on a floured surface. Cut the dough into four equal pieces and roll them each into balls. Roll out the balls of dough so that they are an ⅛ inch thick circles.
  6. Heat the oil in a skillet over medium heat.
  7. Place one of the dough circles into the pan and cook it for about 1–1½ minutes or until it bubbles up.
  8. Flip the flatbread and cook the other side, pressing it down if it puffs up. There should be small golden-brown spots on both sides.
  9. Transfer the cooked flatbread to a plate and cover it with a towel while cooking the remaining pieces.
