Agege Bread

Nigeria’s signature agege bread is named for its origin, a suburb in Lagos—this country’s and Africa’s largest city, with over 16 million people. Lagosians are rightly proud of their soft, stretchy, dense bread, which is perfect for dunking in coffee or for mopping up rich stews. In the United States, it is popular in areas with a strong West African presence, such as in Houston, Texas.

Ingredients

  • 2 cups bread flour, plus more for surfaces
  • 1 Tbsp active dry yeast
  • 1 tsp salt
  • 2 Tbsp sugar
  •  ½ cup warm water

Directions

  1. Sift the flour, yeast, salt, and sugar into a mixing bowl.
  2. Gradually add the warm water, mixing the dough to get it soft and stretchy without becoming sticky.
  3. Knead it on a floured surface for 10 minutes.
  4. Roll it into a ball. Cover with damp towel, and let it rise for 60 minutes.
  5. Preheat an oven to 350˚F and line a loaf pan with parchment.
  6. Knead the dough for 2–3 minutes and then shape it into the pan.
  7. Bake for 45 minutes to a light golden-brown.
  8. Cool and serve.
